4 large lettuce leaves<br />
2 large apples (peeled and cubed)<br />
2 stalks of celery (diced)<br />
1 good handful of raisins<br />
1 tablespoon of low fat mayonnaise<br />
1 tablespoon of lemon juice</p>

Combine all ingredients (except for the lettuce leaves) in a large bowl. Place in the fridge until ready to serve. When ready to serve, place lettuce leave on each plate and spoon mixture on. Great as a side dish.</p>

It&#8217;s much easier for some parents to get their kids to run a 5K than it is to eat a balanced meal. Our bodies naturally crave sugar, salt, and fat. Newborn babies often have to be given sweet sugar water to initiate the sucking response that leads to nursing. As kids mature, they&#8217;re bombarded with advertisements for junk food and tempted by their classmates&#8217; Cheetos and Oreos. So how do we encourage healthy eating habits when both biological and environmental factors get in our way? Here are a few tips:</p>
<p><strong>Sound the Alarm</strong><br />
This is a technique I&#8217;ve used with my students for years. During after-school snack time, I sit and talk with them about their day. When I notice one of them is eating a healthy snack, I blurt out, &#8220;Ding Ding Ding! Healthy snack alert! Healthy snack alert!&#8221; while pointing to the nutritious choice. Like clockwork, the next day&#8217;s snack time is filled with kids proudly unveiling their healthy snacks. Some kids can&#8217;t wait to show me. Others quietly unwrap their snack with a sly look on their face, knowing they&#8217;re about to be praised.</p>
<p><span id="more-59"></span></p>
<p>Try this at home with your young children when they independently choose a healthy snack. Use my &#8220;Ding Ding Ding!&#8221; routine or come up with one of your own. The more fanfare the better!</p>

<p>It didn&#8217;t matter what was wrong with me, be it a stomach upset or a rogue spot, the remedy prescribed by Senegalese friends was always the same. Baobab fruit – and lots of it.</p>
<p><!--proximic_content_off--> <!--proximic_content_on-->Usually it was administered in the form of a Senegalese smoothie, the fruit pulp mixed with water to make what is known in the local Wolof language as bouye. The white drink delivered hints of velvety yoghurt with a flick of tart sherbet to the tongue. And it was not only mighty tasty, it left Western anti-diarrhoea fixes, such as Imodium, lagging and was soon an ever-present item in my fridge.</p>
<p><span id="more-54"></span></p>
<p>The baobab fruit has three times as much vitamin C as an orange, 50 per cent more calcium than spinach and is a plentiful source of anti-oxidants, those disease-fighting molecules credited with helping reduce the risk of everything from cancer to heart disease. Until recently, this super-fruit was off limits to British consumers, unless they fancied a shopping trip to Africa. But now the baobab fruit has won approval from EU food regulators, expect it to be winging its way to a supermarket shelf near you.</p>

<p>The baobab tree is an integral part of the African landscape. Nicknamed the &#8220;upside-down tree&#8221;, it looks like it has been planted on its head, with its roots sticking up into the air to produce a somewhat eerie silhouette.</p>
<p>Bush legends about the baobab abound. One has it that the god Thora took a dislike to the baobab growing in his garden and promptly chucked it over the wall of paradise; it landed below on earth, upside down but still alive, and continued to grow. In another popular myth, the gods get so irritated by the vanity of the baobab, as it tosses it branches, flicks its flowers and brags to other creatures about its superlative beauty, that they uproot it and upend it to teach it a lesson in humility.</p>
<p>Today, many Africans refer to it as the &#8220;Tree of Life&#8221;, and it&#8217;s not hard to see why. With a trunk that can grow up to 15m in circumference, a single tree can hold up to 4,500 litres of water. <p>The fruit, contained in a hard nut, has six times more vitamin C than oranges and twice as much calcium as milk.</p>
<p>African people have eaten the fruit for thousands of years, but Europeans will consume its pulp as an ingredient in smoothies and cereal bars.</p>
<p>Since 1997, foods not commonly consumed in the EU have had to be formally approved before going on sale.</p>

<p>The baobab tree grows throughout certain parts of Africa and has many different uses.</p>

			<content:encoded><![CDATA[<p>THE EUROPEAN Commission has proposed a €90 million scheme that would see free fruit and vegetables provided to schoolchildren across the EU from next year.</p>
<p>If it receives approval from the Council of Ministers and European Parliament, the scheme will be offered to member states, including Ireland, later in the year.</p>
<p>The initiative was announced in Brussels yesterday by Mariann Fischer Boel, commissioner for agriculture and rural development, who said the commission wanted to demonstrate it was serious about taking concrete steps to fight obesity.</p>

<p>&#8220;Giving kids good habits at an early age is crucial as they will carry these into later life.</p>
<p>&#8220;Too many of our children eat far too little fruit and vegetables and often don&#8217;t appreciate how delicious they are.</p>
<p>&#8220;You only have to walk down any high street in Europe to see the extent of the problems we face with overweight kids.&#8221;</p>
<p>She said the scheme would be paid for with EU funds of € 90 million per year, and this would be matched by national funds in the countries that decided to take part in the programme.</p>

			<content:encoded><![CDATA[<p>New research suggests that losing weight can be almost as easy as putting pen to paper.</p>
<p>A new study has found that overweight and obese men and women who exercised and followed a healthy diet lost more weight if they kept a diary of what they ate.</p>
<p>Study subjects who kept track of their eating habits actually lost almost twice the weight &#8211; an average of 13 pounds &#8211; compared to those who did not.</p>
<p>A Canadian weight-loss specialist said the findings prove that one of the key long-term treatments for losing weight is learning how to modify food intake.</p>
<p>&#8220;Journaling helps us plot this course,&#8221; Dr. Robert Dent, founder of the weight loss clinic at The Ottawa Hospital, said Tuesday in an interview on CTV Newsnet. &#8220;So not only does it help us understand how to restrict certain foods, it helps us understand that we can have certain foods in moderation.&#8221;</p>
<p>The study was conducted by researchers at Kaiser Permanente&#8217;s Center for Health Research in Portland, Ore. The findings will be published in the August edition of the <em>American Journal of Preventive Medicine.</em></p>

<p>The study&#8217;s 1,700 participants:</p>
<ul>
<li>Followed a diet rich in fruits and vegetables and low- or non-fat dairy products.</li>
<li>Did moderate exercise for 30 minutes a day.</li>
<li>Attended weekly support meetings.</li>
<li>Kept a diary outlining the foods they ate and calories they consumed.</li>
</ul>
<p>In the United States, two out of every three adults is either overweight or obese. The epidemic costs the country&#8217;s health-care system about US$93 billion.</p>
